My Jelly Doesn’t set. Why?
Boil agar-agar at 85°C to activate. It sets faster than gelatin, so don’t disturb it. Add tannin-rich ingredients like coffee or tea after boiling.
Agar Agar is clumping up. Why?
Agar-agar sets at 95 – 113°F (35 – 45°C), so if you put your agar-agar powder in a warm liquid, it will clump up. Make sure to add the powder to a cold liquid.
My Agar Jelly layer doesn’t stick together. Why?
Your bottom layer must still be warm, while firm enough to take the next layer. And your top layer must be hot, straight off the stove.
Why is my agar jelly cloudy?
Without coloring, it is slightly cloudy, rather than crystal-clear.
The texture is off. What should I do?
With agar-agar, accurate measurement is vital. Too firm? Reheat, boil, add water, and simmer. Too soft? Boil the jelly, dissolve more agar in another pot, combine, simmer, and adjust.
