Tapioca Flour is one of our most versatile gluten free flours. This starchy, slightly sweet flour is a staple in gluten free baking and a fantastic thickening agent in soups, sauces and pie fillings.
It’s a paleo diet favorite as well as one of the main ingredients for pao de queijo, or Brazilian cheese bread. Use with other alternative flours like coconut flour, cassava flour, potato starch and arrowroot starch with xanthan gum for best results.
Sunflower Cracker Recipe
Ingredients:
- 1 cup Premium Shelled Sunflower Seeds (140g)
- 1/2 cup Tapioca Flour (60g)
- 1/2 tsp Salt
- 1/4 tsp Baking Powder
- 1/4 cup Water
- Olive Oil
- Assorted Seeds and Spices for topping (chia seeds, sesame seeds, sea salt, black pepper, oregano)
Instructions:
- Preheat oven to 325°F. Line a baking sheet with parchment paper.
- In a food processor, combine sunflower seeds, tapioca flour, salt and baking powder.
- With the processor running, stream in the water until a dough forms.
- Remove the dough, set on a piece of parchment paper and let rest for 5 minutes.
- Between two pieces of parchment paper, roll the dough to about 2 – 3 mm thickness. Cut the dough into 4×8 cm rectangles.
- Place the crackers on the prepared baking sheet, leaving about ½-inch space between crackers. Brush the tops of the crackers with olive oil and sprinkle with seeds and spices.
