The variety of these purple/white sweet potatoes are Murasaki Sweet Potatoes. This sweet potatoes variety has reddish-purple skin with a flesh that is actually white. Their name comes from the Japanese word for purple because of the color of their skin. These sweet potatoes have a sweet taste with notes of brown sugar and vanilla, and a very starchy, moist texture, making them good sweet potatoes for baked goods.

These sweet potatoes are fresh dug and shipped dirty. This is done to prolong their shelf life, if stored properly they can be preserved upwards of 90 days.
