Snickerdoodles Preheat oven to 180 degrees celcius (350 fahrenheit) and line a baking sheet with parchment paper. In a bowl combine 250g (2 cups) almond flour, 2 tablespoons coconut flour, ¼ teaspoon salt and ¼ teaspoon baking soda until well mixed. In another bowl add 1 egg, 55g (¼ cup) coconut oil / butter / ghee, and 10ml (2 teaspoons) liquid stevia with 60ml (¼ cup) almond milk (or any milk alternative) and whisk together. Pour wet ingredients into dry and mix until thoroughly incorporated and combined. Roll dough into equal sized balls about an inch in diameter and place them on the baking sheet for now. In a ramekin place 2 tablespoons of cinnamon and roll each ball around in the cinnamon until compley coated and place back on the baking sheet evenly spaced apart with enough room for flattening them. Dip either the bottom of a mason jar or cup with a rounded bottom into cinnamon and flatten each cookie about to about ½ inch thickness. Place in the oven for 15-20 minutes or until the center of the cookies are no longer compley soft and have a slight resistance to the touch. Place on a wire rack and allow to cool for at least 15 minutes. Vanilla, caramel, salted caramel, toffee, marshmallow, cookie or natural flavor work best for this recipe.
Coconut & Blueberry Ice Lolly – Chop 150 grams (2/3 cup) of creamed coconut into 6 pieces and place in a saucepan. Add the 150 ml (5 ½ fl.oz.) of freshly boiled water. Stir the mixture, allowing the coconut to melt and blend with the water. You may need to blend with a handheld blender until a smooth paste is formed. Add 7.5ml (1 ½ teaspoons) of Modern Nature Liquid Stevia s Sweetener and blend again (to mix the stevia through). Leave to cool to room temperature. Once the coconut mixture is cooled start on the blueberry puree. Place 200 grams (1 ⅓ cup) of fresh blueberries into another saucepan and puree with a hand-held blender until a smooth consistency is reached. Add 1 teaspoon of lemon juice to the blueberries and the remaining ½ teaspoon of Modern Nature Liquid Stevia s Sweetener then blend again to mix in. Pour the coconut mixture to ⅓ of the way up each of the popsicle moulds. Then spoon in the blueberry puree to ⅔ of the way up the mould. Pour remaining coconut mixture up to the top. Place the sticks into each mould. The popsicles will need approximay 6 hours to freeze. To take the popsicles out of their moulds, run the mould under hot water for 10 seconds. This will loosen the edges and allow the popsicles to be pulled out easily.

Add cold milk and ice to a tall glass and pour salted caramel coffee over the top of the ice. Top with light whipped cream if desired.

Ingredients: ¼ tsp cinnamon, 50g (1.7 oz) rolled porridge oats, 160ml (2/3 cup) milk (any kind), 10 s modern nature liquid stevia in salted caramel flavor. Method: The night before mix ingredients in a bowl and leave in the fridge. When ready top with 2 tbsp natural yoghurt, ½ tsp nut butter & berries. A healthy breakfast idea for all the family.
